I hope that my rooted One UI 7 doesn’t get the update through some backdoor in the Google Play Services package… Or the next time I unblock Google Play to update the very few paid apps that I use…

Just reinstall the OS without gapps. Done.
In my country, that’s a hard bargain, as we need certain apps that rely on gapps to identify ourselves in formal dealings with nation, county and city actors. But yeah, Graphene’s sandboxed Google Play Services would be a good start for me.
Yeah, just install GrapheneOS, set up your initial profile without anything Google, then configure the secondary profile with GMS and everything else you need to run with Google on it.
That’s how I have both phones, and I only visit the profile with Google services if I absolutely need to. Once dine, I log out that user until I need it again.
