Also it’s Taco Tuesday! These are taco’s from In-A+Tub in Kansas City, MO, USA. There is a big contention on these tacos. Many people new to Kansas City will say these are not authentic tacos. But those from Kansas City will set them straight. In-A-Tub has been serving these tacos since the 1950s. The reason the tacos have a yellow cheese was the restaurants take on what I will call the Kansas City Taco.
During the turn of the last century Mexicans came up from Mexico to work on the railroads. (This how my wife’s family came here) When they arrived they did not have traditional Mexican cheeses available, but they did have the already established Italian population. So through diaspora they started using Parmesan on the tacos. And this is why they’re still authentic. I still remember sitting in her grandmother’s hot kitchen as they fried these delicious tacos.

sprinkledcaked on top?That is exactly what it is! It’s actually like the cheese from Kraft Mac and Cheese. I’m not sure why they chose to use it vs Parmesan. But they’ve been made the same way since before I was born.
