Might be worth trying again if your first attempt was a while ago. That being said, the default GUI installer does kinda suck. It’s really not for the faint of heart, but I personally install through debootstrap on my main workstation: https://openzfs.github.io/openzfs-docs/Getting Started/Debian/Debian Trixie Root on ZFS.html
